Abstract
El desperdicio de alimentos en supermercados representa un desafío crítico en términos de
sostenibilidad ambiental y seguridad alimentaria, especialmente en ciudades como Tegucigalpa.
Esta tesis se centra en la implementación de un plan de acción de logística inversa para minimizar
el desperdicio de alimentos perecederos y no perecederos, promoviendo la redistribución de
excedentes alimentarios hacia sectores vulnerables. A través de un análisis exhaustivo y la
propuesta de procedimientos basados en indicadores globales, se abordaron problemas como el
sobrestock, productos vencidos, y mercadería dañada, identificados como causas principales del
desperdicio. Los resultados de esta investigación destacan la importancia de integrar herramientas
tecnológicas, capacitación del personal y alianzas estratégicas con organizaciones como el Banco
de Alimentos, para mejorar la gestión de inventarios y reducir las pérdidas. Este enfoque no solo
contribuye a la responsabilidad social de los supermercados, sino que también optimiza los
recursos económicos y operativos. La propuesta incluye un manual de procedimientos alineado
con normas internacionales (ISO 9001 e ISO 22000) que garantiza la sostenibilidad del sistema.
Este trabajo proporciona una guía práctica y replicable para la reducción del desperdicio de
alimentos, con implicaciones significativas para otros contextos urbanos.
Food waste in supermarkets poses a critical challenge in terms of environmental sustainability and food security, particularly in cities like Tegucigalpa. This thesis focuses on implementing a reverse logistics action plan to minimize waste from perishable and non-perishable food items, promoting the redistribution of food surpluses to vulnerable sectors. Through a comprehensive analysis and the proposal of globally recognized indicator-based procedures, key issues such as overstock, expired products, and damaged goods were identified as the primary causes of waste.The findings highlight the importance of integrating technological tools, staff training, and strategic partnerships with organizations like the Food Bank to enhance inventory management and reduce losses. This approach not only fosters the social responsibility of supermarkets but also optimizes economic and operational resources. The proposal includes a procedure manual aligned with international standards (ISO 9001 and ISO 22000) to ensure system sustainability.
