Abstract
El presente estudio de prefactibilidad demuestra la viabilidad de implementar la pastelería "La Abuela Berti's" en el municipio de Yoro, departamento de Yoro, Honduras; tras evaluar tres dimensiones clave: mercado, aspectos técnicos y financieros. Los resultados revelan una demanda insatisfecha de repostería artesanal de calidad en la zona, confirmando tanto la factibilidad técnica con una ubicación estratégica y procesos optimizados como la rentabilidad financiera, respaldada por un VAN positivo y una TIR atractiva. Además de su potencial económico, el proyecto destaca por su valor cultural al preservar tradiciones familiares, su capacidad para generar empleo local y su enfoque sostenible. El análisis integral, que combinó métodos cuantitativos (encuestas a 383 consumidores) y cualitativos (entrevistas a expertos y a la pionera de la receta), sustenta que esta iniciativa no solo cubriría un nicho desatendido, sino que se posicionaría como referente gastronómico en la región, recomendándose su implementación con un plan que incluye estructura organizacional definida, cronograma de actividades, presupuesto y estrategias de mitigación de riesgos.
This prefeasibility study demonstrates the viability of implementing the "La Abuela Berti's" bakery in the municipality of Yoro, department of Yoro, Honduras, after evaluating three key dimensions: market, technical, and financial aspects. The results reveal an unmet demand for quality artisanal pastries in the area, confirming both the technical feasibility with a strategic location and optimized processes, and the financial profitability, supported by a positive NPV and an attractive IRR. In addition to its economic potential, the project stands out for its cultural value by preserving family traditions, its capacity to generate local employment, and its sustainable approach. The comprehensive analysis, which combined quantitative methods (surveys of 383 consumers) and qualitative methods (interviews with experts and the recipe's pioneer), supports that this initiative would not only fill an underserved niche but would also position itself as a gastronomic benchmark in the region. Its implementation is recommended with a plan that includes a defined organizational structure, activity schedule, budget, and risk mitigation strategies.
