Abstract
La presente investigación tiene como objetivo un cambio significativo para la empresa Desarrollo Agroindustriales de Centroamérica S A DACSA, ya que plantea una propuesta de un Sistema de Gestión Integrado basado en las normas ISO 9000:2015 e ISO 22000:2018, centrada, especialmente en el proceso de empaque del huevo fresco BONOVO. Considerando los factores como la calidad e inocuidad alimentaria que son de hecho fundamentales para la competitividad de las empresas agroindustriales en el ámbito avícola. La metodología de estudio aplicada hace uso de un enfoque mixto. Con ello se busca en consecuencia conseguir una buena combinación de métodos cualitativos y cuantitativos para llevar a cabo un análisis exhaustivo. Para el estudio del contexto actual se aplicaron los siguientes instrumentos, entrevistas estructuradas, observación directa y el estudio minucioso de los documentos. Adicionalmente se aplicaron listas de verificación, fundamentadas en las normas ISO 9000:2015 e ISO 22000:2018; así mismo se revisaron también documentos internos relacionados con la productividad, trazabilidad y conformidad del producto.
This research aims to bring about a significant change for the company Desarrollo Agroindustriales de Centroamérica S.A. (DACSA), by proposing an Integrated Management System based on the ISO 9000:2015 and ISO 22000:2018 standards, focusing particularly on the BONOVO fresh egg packaging process. It considers factors such as quality and food safety, which are fundamental to the competitiveness of agro-industrial companies in the poultry sector. The study methodology employed uses a mixed-methods approach. This approach seeks to achieve a good combination of qualitative and quantitative methods to conduct a comprehensive analysis. The following instruments were used to study the current context: structured interviews, direct observation, and a thorough review of documents. Additionally, checklists based on the ISO 9000:2015 and ISO 22000:2018 standards were applied. Internal documents related to productivity, traceability, and product conformity were also reviewed.
